Here is an All-time favorite for every student at every, Divine Desserts class, for everyone who has ever tried another raw dessert or made a raw dessert themselves, for my children and for myself of course!

CocoChoco Love Pie!!!

Makes 2- 9" pies or 1 - 10" spring-form
Crust:
3 C Soaked and dehydrated Pecans
1 C. fine shredded coconut
3/4 cup Pitted medjool dates (for more caramel flavor try black Sphinx or Barhi dates)
1T vanilla extract or caviatr of 1 Vanilla bean
1/8 tsp salt of choice
pinch cayenne or chipotle
Directions:
combine all ingredients except coconut and vanilla pulse until mixture begins to resemble coarse wet sand. add vanilla over as much surface area as possible, spread coconut over mixture and pulse until the remaining pecans resemble the coconut in size and the mix just begins to stick together. (Over processing will cause the oils to pull out of the nuts! Careful!!!)
Tip: For best results - prepare crust 24 hours in advance and dehydrate at 110 F until super crisp and dry.
in Spring form pan. pack the crust up and around 1/3 -1/2 way up the sides.
Filling:
2 Young coconuts meat - Opened and meat separated from liquid. save 1.5 c liquid. enjoy the rest!!!1.5 C coconut juice (reserved)
1# Raw Cashews soaked 4 hours Organic Best TJ's has best price for quality
1 cup coconut oil -
1 C pitted sweet tender dates( Barhi or Medjool, Blax sphinx preffered!!)
2 Tbs. Ojio Raw Cider or coconut or homemade plum or other fruity vinegar.
1/2 cup Ojio Raw Cacao Powder ( UltimateSuperfoods, Nativas, EarthFamily)
1 Vanilla bean or 1 Tbs extract
1/4 tsp clean mineral rich sea salt
Directions:
Place all ingredients in blender in the order listed. (Blendtec, Vitamix or = )
Blend until smooth and creamy. Depending on your machine you may have to wait for it to cool. Longer soak time can help less powerful blenders be more effective!
pour into prepared crust: Decorate as desired and refrigerate fro 24 hours before slicing int this heavenly devotion!
